Luxury White Chocolate Tiffin

Yesterday I sent out the menu to all my guests who are coming for Afternoon Tea on Sept 17th. I wanted to add something different and fancied making Tiffin but with White chocolate instead of the usual Dark.

 Luxury White Chocolate Tiffin

100g Butter
25g Light Muscovado Sugar
3 tablespoons Cocoa Powder
4 tablespoons Golden Syrup
225g  Shortbread biscuits finely crushed
200g Luxury Mixed Dried Fruit (chopped if fruit is too large)
230g Luxury White Chocolate
8 ins round sandwich tin, unlined.
Put the Butter, Sugar, Cocoa Powder and Syrup into a pan and gently heat until eveything has dissolved.
Take off the heat, add the biscuits and mixed fruit. Mix until well combined.
Pour the mixture into the sandwich tin and press down firmly and evenly. Put the tin into the fridge to allow the mixture to cool down.
In the mean time melt the White Chocolate in a bowl over a pan of simmering water until dissolved.
Take the tin of fruit mixture out of the fridge and pour the chocolate over the top and spread evenly. Return to the fridge to set. As the Tiffin cools score cutting lines through the chocolate before it sets completely. This will allow you to cut into triangles more easily.
Use milk or plain chocolate in place of white chocolate
Replace the luxury mixed dried fruit with ordinary mixed dried fruit.
Use a square sandwich tin and cut the Tiffin into smaller squares and serve as Petit fours in pretty paper cases.
